I would recommend hiring a "Production Manager" experienced in that area. If it is something you want to learn, then hire one and have him/her show you the ropes or consult. A good PM will have many connections and can save considerable money, time and grief by utilizing trusted vendors that they know and work with. additionally, they will know "going rates" for the various services.
An experienced PM can bid out the various services and put together a proposed budget while taking into account hidden costs etc...
